Instructions

  1. Activate the Yeast: Combine warm water, sugar, and active dry yeast in a small bowl. Let sit for 5 to 10 minutes until frothy, indicating the yeast is active.
  2. Mix the Dough: In a large bowl, mix the flour and sea salt. Add olive oil, minced garlic, chopped rosemary, and the frothy yeast mixture. Stir until the dough begins to come together.
  3. Knead the Dough: Turn the dough onto a lightly floured surface and knead for 8 to 10 minutes until smooth and elastic. Add small amounts of flour if the dough is sticky, but keep it moist.
  4. First Rise: Place the dough in a greased bowl, cover with a damp cloth or plastic wrap, and let rise in a warm spot for about 1 hour or until it doubles in size.
  5. Shape and Prepare Muffins: Punch down the risen dough to release air. Divide evenly into a greased muffin tin. Use your fingers to dimple the tops of each muffin, drizzle with olive oil, and sprinkle extra rosemary and sea salt.
