Ingredients

Scale

Pasta

  • 8 ounces rotini or elbow macaroni

Hard-Boiled Eggs

  • 6 large eggs, hard-boiled and peeled

Dressing

  • 1/3 cup mayonnaise
  • 2 teaspoons mustard
  • 1/2 teaspoon paprika, plus extra for garnish
  • Salt, to taste
  • Black pepper, to taste

Fresh Vegetables

  • 1/2 cup celery, finely chopped
  • 1/4 cup green onions, sliced thinly
  • 1/2 cup bell peppers, diced

Pickles and Relish

  • 1/4 cup dill pickles or sweet pickle relish, chopped

Optional Garnishes

  • Fresh parsley, chopped
  • Additional green onions, thinly sliced

Instructions

  1. Cook the Pasta: Boil the pasta in salted water until al dente. Drain and rinse under cold water to stop the cooking process and cool the pasta for the salad.
  2. Prepare the Hard-Boiled Eggs: Boil the eggs until yolks are firm. Cool immediately in ice water, peel, then chop the egg whites into bite-sized pieces. Set aside the yolks to make the deviled egg dressing.
  3. Mix the Deviled Egg Dressing: In a bowl, mash the reserved egg yolks with mayonnaise, mustard, paprika, salt, and pepper until creamy and smooth. This mixture forms the unique flavor base of your salad.
  4. Combine Ingredients: In a large bowl, gently mix the cooled pasta, chopped egg whites, fresh vegetables, pickles or relish, and the deviled egg dressing until everything is evenly coated.
  5. Chill and Serve: Cover the salad and refrigerate for at least one hour to allow the flavors to meld. Serve chilled or at room temperature for the best taste experience.

Notes

  • To avoid gray yolks, boil eggs gently and plunge them immediately into ice water.
  • Choose sturdy pasta shapes like rotini or elbow macaroni to hold dressing well without turning mushy.
  • Adjust creaminess by gradually adding more mayonnaise or Greek yogurt to achieve desired consistency.
  • For enhanced flavor, chill the salad thoroughly; overnight chilling is ideal.
  • Add delicate greens or crunchy nuts just before serving to maintain freshness and texture.
