Cake Batter
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder (preferably Dutch-processed)
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 1/2 cups granulated sugar
- 1 cup unsalted butter, softened
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 cup milk or buttermilk
Caramel and Peanut Filling
- 1 cup caramel sauce (homemade or store-bought)
- 1 cup chopped roasted peanuts
Frosting
- 1 cup chocolate ganache or chocolate frosting
- Prepare Your Pans and Ingredients: Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans. Measure all ingredients and sift the dry ingredients—flour, cocoa powder, baking powder, and baking soda—to ensure a smooth, lump-free batter.
- Mix the Cake Batter: In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract. Alternately add the sifted dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Stir just until combined to maintain a moist, tender crumb.
- Bake the Cake Layers: Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- Prepare the Caramel and Peanut Filling: If the caramel sauce is thick, warm it slightly for easier spreading. Fold in the chopped roasted peanuts carefully to create a gooey, crunchy filling that echoes classic Snickers flavors.
- Assemble the Cake: Place one cake layer on the serving plate. Evenly spread half of the caramel-peanut mixture over the layer. Position the second cake layer on top and spread the remaining caramel-peanut mixture over the top and sides, coating the cake lavishly.
- Frost with Chocolate Ganache: Pour the chocolate ganache or frosting over the assembled cake, allowing it to drip gently down the sides. Use a spatula to smooth the ganache top and edges, sealing in the caramel and peanut filling beautifully.
Notes
- Use high-quality Dutch-processed cocoa powder for the richest chocolate flavor.
- Do not overmix the batter; stir just until ingredients combine to keep the cake light and fluffy.
- Warm caramel slightly before spreading to avoid tearing the cake layers.
- Chill the cake in the refrigerator for at least an hour before slicing for cleaner cuts.
- Toast peanuts before chopping to enhance their flavor and crunch.
