  • 1 can (400g) kidney beans, drained and rinsed
  • 1 can (400g) black beans, drained and rinsed

  • 3 cloves garlic, minced
  • 1 can (400g) chopped tomatoes
  • 400ml coconut milk
  • 250ml vegetable stock

Spices

  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground turmeric

Coriander Drizzle

  • 1 cup fresh coriander (cilantro) leaves
  • 1 tbsp lime juice
  • 2 tbsp olive oil
  • Salt, to taste
  • 23 tbsp water (to adjust consistency)

Instructions

  1. Prepare the Base: Finely chop the onions and garlic. Sauté them in a splash of oil over medium heat until soft and translucent, forming the flavorful foundation of the stew.
  2. Add Spices and Tomatoes: Stir in the curry powder, cumin, and turmeric. Toast the spices gently for about one minute to release their aromatic oils. Add chopped tomatoes and cook until they break down into a rich sauce.
  3. Mix in Beans and Coconut Milk: Add the drained beans to the pot, followed by vegetable stock and coconut milk. Stir to combine and allow the flavors to meld as the stew simmers gently for 15 to 20 minutes, thickening slightly.
  4. Prepare the Coriander Drizzle: While the stew simmers, blend the fresh coriander leaves with lime juice, olive oil, salt, and a little water until bright and vibrant with a pourable consistency.
  5. Serve and Drizzle: Once the stew is thick and flavorful, ladle it into bowls and generously drizzle with the coriander mixture for a fresh, aromatic finish.
