Ingredients

Scale

Primary Ingredients

  • 2 lbs boneless chicken breasts or thighs
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup sweet corn kernels, drained
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Finishing Touches & Garnish

  • Juice of 1 fresh lime
  • Tortilla strips or chips for garnish
  • Chopped fresh cilantro

Instructions

  1. Prepare the Ingredients: Dice the onion, mince the garlic, and drain and rinse the black beans and corn. This prep work helps layer the flavors and speeds up cooking.
  2. Layer in the Crockpot: Place the chicken breasts or thighs at the bottom of the crockpot. Add diced onions, garlic, diced tomatoes, black beans, corn, chicken broth, chili powder, cumin, salt, and pepper on top. Layering allows the flavors to meld beautifully.
  3. Cook Low and Slow: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender and can be easily shredded.
  4. Shred the Chicken: Remove the chicken from the crockpot, shred it with two forks, then return the shredded chicken back into the soup to absorb more flavor.
  5. Add Fresh Lime and Serve: Stir in fresh lime juice just before serving to add a bright, zesty finish. Garnish with tortilla strips and chopped cilantro for the perfect crunchy and fresh contrast.

Notes

  • Prep ahead by chopping vegetables and gathering spices the night before.
  • Use bone-in chicken thighs or drumsticks instead of breasts for richer flavor.
  • Toast spices briefly on stovetop before adding to boost aroma (optional).
  • Always add lime juice just before serving to balance richness.
  • Add tortilla strips only right before serving to keep them crispy.
