Instructions

  1. Prep the Potatoes: Wash and scrub russet potatoes thoroughly to remove dirt. Leave the skins on for extra texture and flavor. Cut each potato into even wedges for uniform cooking.
  2. Soak to Remove Starch: Place the potato wedges in a large bowl of cold water and soak for at least 30 minutes. This removes excess starch, helping the wedges crisp up beautifully.
  3. Dry and Season: Drain and pat the wedges completely dry using a clean towel. Toss them in olive oil, garlic powder, paprika, salt, and pepper until evenly coated. Add any optional herbs at this stage if desired.
  4. Arrange and Bake: Spread the wedges out on a large baking sheet lined with parchment paper or lightly greased rack, ensuring there is space between each wedge for air circulation.
