Ingredients

Scale

Fish and Coating

  • Fresh cod fillets, boneless and skinless (about 1 lb)
  • 1 cup all-purpose flour (or gluten-free flour for variation)
  • 2 large eggs, beaten
  • 1 to 1 ½ cups breadcrumbs or panko breadcrumbs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika

For Frying

  • Vegetable oil, enough for deep frying (about 2 cups)

Buns and Toppings

  • 4 soft sandwich buns (toasted)
  • Fresh lettuce leaves
  • 2 ripe tomatoes, sliced
  • Pickles, sliced
  • Tartar sauce or zesty mayo blend

Instructions

  1. Prepare the Cod: Rinse the cod fillets under cold water and pat dry thoroughly with paper towels. Cut the fillets into sandwich-sized portions to ensure they fit well on your buns.
  2. Mix the Breading: In separate bowls, combine the all-purpose flour with salt, pepper, garlic powder, and paprika. Beat the eggs in a second bowl. Place the breadcrumbs or panko in a third bowl. This three-step breading process builds a crispy coating.
  3. Coat the Fish: Dip each piece of cod first into the seasoned flour mixture, shaking off excess, then into the beaten eggs, and finally coat thoroughly with the breadcrumbs or panko. Press the crumbs gently so the coating adheres evenly.
  4. Fry to Golden: Heat vegetable oil in a deep pan to 350°F (175°C). Fry the breaded cod pieces in batches for 3-4 minutes per side until golden brown and cooked through. Drain on paper towels to remove excess oil.
  5. Toast the Buns: Lightly butter the sandwich buns and toast them in a skillet until warm and slightly crisp to prevent sogginess and enhance flavor.
  6. Assemble the Sandwich: Spread a generous layer of tartar sauce or your favorite condiment on the bottom bun. Layer fresh lettuce leaves, tomato slices, then place the crispy cod fillet on top. Add sliced pickles and cover with the top bun. Serve immediately.

Notes

  • Dry fish well before breading to ensure coating sticks and remains crisp.
  • Maintain oil temperature between 350-360°F for perfect frying without greasiness.
  • Fry in small batches to avoid overcrowding and to keep oil temperature steady.
  • Use panko breadcrumbs for a lighter, crunchier texture.
  • Rest fried cod on a wire rack while toasting buns to keep crust crisp.
