Instructions

  1. Prepare the Chicken Filling: In a bowl, mix shredded cooked chicken with shredded cheese and spices including cumin, chili powder, garlic powder, and paprika. Add optional cilantro or onions and a splash of chicken broth or salsa to keep the mixture moist yet firm enough to roll.
  2. Warm the Tortillas: Gently warm tortillas in a skillet or microwave until pliable to prevent cracking during rolling.
  3. Assemble the Taquitos: Place about 2 tablespoons of the chicken mixture near one edge of each tortilla. Roll tightly and tuck edges as needed. Brush the edge with water or beaten egg to seal.
  4. Fry Until Golden and Crispy: Heat oil in a deep skillet over medium-high heat to 350°F-375°F. Fry rolled taquitos seam side down for 2-3 minutes per side until golden brown and crisp. Drain on paper towels to remove excess oil.
