Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts

Fats for Cooking

  • 2 tablespoons butter
  • 1 tablespoon olive oil

Aromatics & Herbs

  • 3 garlic cloves, freshly minced
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh rosemary, chopped

Sauce

  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Prepare the Chicken: Season the chicken breasts generously with salt and black pepper on both sides. Heat butter and olive oil in a large skillet over medium-high heat. Sear the chicken breasts until golden brown on each side, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  2. Build the Flavor Base: In the same skillet, add the minced garlic and fresh herbs (thyme, parsley, rosemary). Sauté for 1-2 minutes until fragrant, taking care not to burn the garlic. This infuses the oil with aromatic flavors that will form the base of your sauce.
  3. Create the Creamy Sauce: Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Add the heavy cream and grated Parmesan cheese, stirring frequently. Allow the sauce to simmer gently until it thickens and becomes silky smooth.
  4. Combine Chicken and Sauce: Return the chicken breasts to the skillet, nestling them into the creamy herb sauce. Reduce heat to low and cook for an additional 5-7 minutes, allowing the chicken to finish cooking through and to absorb the flavors.
  5. Final Touches: Add a squeeze of fresh lemon juice and sprinkle additional chopped herbs on top just before serving to brighten the dish and enhance the fresh herbal notes.

Notes

  • Choose even-sized chicken breasts to ensure uniform cooking and avoid dry spots.
  • Do not overcrowd the pan; sear chicken in batches if necessary for a perfect golden crust.
  • Use fresh herbs whenever possible for the best flavor and aroma.
  • Simmer the sauce gently on low heat to prevent the cream from breaking.
  • Let the chicken rest for a few minutes before slicing to lock in juices and keep it tender and juicy.
