Ingredients

Scale

Meat & Aromatics

  • 1 lb ground beef
  • 1 medium onion, diced
  • 23 cloves garlic, minced

Vegetables

  • 34 medium Russet or Yukon Gold potatoes, diced

Dairy

  • 2 cups sharp cheddar cheese, shredded
  • 1 cup milk
  • 1/2 cup heavy cream
  • 2 tbsp butter

Liquids & Thickener

  • 4 cups beef broth
  • 2 tbsp all-purpose flour (or gluten-free flour as needed)

Spices & Seasonings

  • 1 tsp salt, to taste
  • 1/2 tsp black pepper, to taste
  • 1/2 tsp paprika

Instructions

  1. Brown the Beef and Sauté Aromatics: Heat a large pot over medium heat and add the ground beef. Cook, stirring and crumbling, about 5-7 minutes until browned. Drain excess fat. Add diced onions and minced garlic; sauté until softened and fragrant to build the soup’s flavorful base.
  2. Prepare the Roux: In the same pot, melt butter over medium heat. Stir in flour continuously and cook for about 2 minutes until the mixture turns golden, creating a roux that will thicken the soup for a velvety texture.
  3. Add Broth and Potatoes: Gradually whisk in the beef broth, ensuring the roux dissolves evenly. Add diced potatoes and bring to a gentle boil. Reduce heat to low and simmer for about 15 minutes, or until potatoes are tender and have absorbed the broth flavors.
  4. Stir in Milk, Cream, and Cheese: Lower the heat and slowly stir in milk and heavy cream, warming gently without boiling to avoid curdling. Add shredded sharp cheddar cheese a handful at a time, stirring constantly until melted and smooth, transforming the soup into a creamy, cheesy delight.
  5. Season and Serve: Season the soup with salt, pepper, and paprika to taste. Stir well and let the soup rest for a few minutes to meld flavors. Ladle into bowls and enjoy the comforting, hearty meal.

Notes

  • Use sharp cheddar cheese to add depth and cut through richness.
  • Don’t skip making the roux; it’s essential for creamy consistency.
  • Add dairy slowly and keep heat low to prevent curdling.
  • Cut potatoes into uniform pieces for even cooking.
  • Season gradually and taste frequently as cheese and broth add saltiness.
