Ingredients

Scale

Vegetables

  • 1 medium head fresh cabbage, chopped into bite-sized pieces
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • Optional: 1-2 carrots, diced
  • Optional: 1-2 potatoes, diced

Sausage

  • 12 ounces flavorful sausage (kielbasa, Italian sausage, or your choice), sliced

Liquids

  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or coconut milk (for dairy-free option)

Seasonings & Herbs

  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon fresh or dried thyme (or substitute with rosemary or sage)
  • Fresh parsley for garnish
  • Optional: crushed red pepper flakes for spice

Instructions

  1. Prepare the Ingredients: Chop the cabbage into bite-sized pieces, slice the sausage, and finely dice the onion and garlic to have everything ready for cooking.
  2. Sauté the Sausage and Aromatics: In a large pot over medium heat, cook the sausage slices until browned and slightly crispy. Remove and set aside. Using the same pot, add diced onion and garlic, sautéing until fragrant and translucent.
  3. Cook the Cabbage: Add the chopped cabbage to the pot, stirring to combine with the onion and garlic. Let it soften for about 5 minutes, stirring occasionally to prevent sticking.
  4. Add Broth and Simmer: Pour in the chicken or vegetable broth, then return the sausage to the pot. Season with salt, pepper, and thyme. Bring the soup to a gentle boil, then reduce heat and simmer for 15-20 minutes to meld flavors.
  5. Stir in Cream for Richness: Slowly add heavy cream or coconut milk, stirring gently to form a smooth, velvety broth. Simmer for an additional 5 minutes on low heat, ensuring the soup heats through without boiling.
  6. Final Taste and Adjustments: Taste the soup and adjust seasoning if necessary. Garnish with fresh parsley before serving.

Notes

  • Brown the Sausage Well: Browning creates extra flavor and texture.
  • Don’t Overcook Cabbage: Keep it slightly crisp for the best texture.
  • Add Cream Last: Prevent curdling by stirring in off or on low heat.
  • Use Quality Broth: Enhances the soup’s depth and taste.
  • Fresh Herbs Matter: Add near the end to keep their bright flavors.
