Ingredients

Scale

Meat & Vegetables

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced

Beans & Sauce

  • 1 can (15 oz) pinto beans or black beans, drained and rinsed
  • 1 can (15 oz) tomato sauce

Spices

  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika

Toppings

  • 2 cups shredded cheddar cheese
  • 1 to 1.5 cups corn chips or crushed crackers

Instructions

  1. Prepare the Base: Brown the ground beef in a large skillet over medium heat until fully cooked. Drain any excess fat. Add diced onions and minced garlic to the skillet and cook until fragrant and translucent.
  2. Add Beans and Sauce: Stir in the canned beans, tomato sauce, diced green bell pepper, chili powder, cumin, and smoked paprika. Simmer the mixture for 5 to 7 minutes to combine the flavors thoroughly.
  3. Assemble the Casserole: Transfer the beef and bean mixture into a greased casserole dish. Evenly sprinkle the shredded cheddar cheese over the top, and then add a layer of crumbled corn chips or crushed crackers for a crunchy topping.
  4. Bake: Preheat the oven to 375°F (190°C). Bake the casserole for 20 to 25 minutes, or until the cheese is melted, bubbly, and the topping is golden brown.
  5. Rest and Serve: Let the casserole rest for 5 minutes after baking to allow the layers to set. Serve warm, optionally garnished with fresh cilantro, sliced green onions, or sour cream.

Notes

  • Use fresh onions and garlic to enhance the overall flavor.
  • Warm beans gently to keep their shape and texture.
  • Season each component individually for balanced flavors.
  • Add corn chips or crackers just before baking for a crunchy topping.
  • Allow the casserole to rest after baking to thicken and meld flavors.
