Instructions

  1. Preheat the Oven and Prepare the Muffin Tin: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin or line it with silicone liners to ensure the egg bites come out easily after baking.
  2. Whisk Eggs and Cottage Cheese Together: In a large mixing bowl, beat the eggs until combined. Add the cottage cheese and whisk well until the mixture becomes creamy and homogenous.
  3. Add Cheese, Veggies, and Seasonings: Gently fold in shredded cheese, chopped vegetables, salt, pepper, and fresh herbs. Mix thoroughly to evenly distribute all ingredients.
  4. Pour Mixture Into Muffin Cups: Evenly divide the egg mixture among the prepared muffin cups, filling each about 3/4 full to allow room for rising during baking.
  5. Bake Until Set and Golden: Place the muffin tin in the oven and bake for 15 to 18 minutes, or until the egg bites are puffed up, set in the center, and lightly golden on top.
