  • 16 oz (2 packages) cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs

  • 1/2 cup sour cream

Instructions

  1. Prepare the Crust: Melt the butter and mix it with 1 cup flour and 2 tablespoons granulated sugar until crumbly. Press this mixture firmly into the bottom of an 8×8-inch baking pan forming a solid buttery base.
  2. Make the Cookie Dough Layer: In a separate bowl, combine 1 cup heat-treated all-purpose flour, brown sugar, granulated sugar, baking powder, and salt. Add softened butter, vanilla extract, and mini chocolate chips. Stir gently until a soft cookie dough forms.
  3. Whip Up the Cheesecake Layer: Beat the cream cheese until creamy and fluffy. Mix in 2/3 cup granulated sugar, eggs, vanilla extract, and sour cream until smooth and velvety.
  4. Assemble the Layers: Spread half of the cookie dough evenly over the crust. Pour the cheesecake mixture on top and smooth it out. Finally, crumble the remaining cookie dough over the cheesecake layer.
  5. Bake to Perfection: Bake at 325°F (163°C) for 40 to 45 minutes, or until the cheesecake is set but still slightly jiggly in the center. Let cool completely before chilling.
