Ingredients

Scale

Brownie Layer

  • 1 batch brownie mix or homemade chocolate brownie batter
  • Butter (as required by brownie mix or recipe)
  • Optional: Chopped walnuts or pecans for crunch

Coffee Cheesecake Filling

  • 16 oz (450g) cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/4 cup freshly brewed strong coffee or espresso
  • 3 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour (or gluten-free flour for gluten-free option)
  • 1/4 cup sour cream or heavy cream (optional, for extra creaminess and slight tang)

Instructions

  1. Prepare the Brownie Layer: Mix your chosen brownie batter according to package instructions or your homemade recipe. Spread evenly into a greased springform pan, creating a firm base that will support the cheesecake topping. Bake at 350°F (175°C) until set but still slightly gooey, for a fudgy texture. Let cool slightly.
  2. Make the Coffee-Infused Cheesecake Filling: Beat softened cream cheese and granulated sugar until smooth and creamy. Add eggs one at a time, blending well after each addition. Stir in the freshly brewed strong coffee or espresso, vanilla extract, and flour until well combined. Fold in sour cream or heavy cream if using, to add creaminess and tang.
  3. Layer and Bake: Pour the cheesecake filling gently over the baked brownie layer, smoothing the surface with a spatula. Bake in a preheated oven at 325°F (160°C) until the cheesecake is mostly set but still slightly jiggly in the center, approximately 35-45 minutes. Avoid overbaking to maintain silky texture.
  4. Cooling and Chilling: Allow the cheesecake to cool completely at room temperature after baking. Then refrigerate for at least 4 hours or preferably overnight to let the flavors meld and the texture firm up well.
  5. Serve and Enjoy: Carefully remove the cheesecake from the springform pan. Slice and serve chilled. Optionally garnish with whipped cream, cocoa powder, chocolate shavings, or fresh berries for extra appeal and flavor.

Notes

  • Use strong brewed coffee or espresso for the best robust coffee flavor.
  • Ensure cream cheese and eggs are at room temperature to avoid lumps and achieve a smooth filling.
  • Baking cheesecake in a water bath can help prevent cracks and promote even baking.
  • Mix ingredients just until combined to maintain a light texture and prevent cracks.
  • Chilling the cheesecake overnight improves flavor and texture.
