Ingredients

Proteins

  • Skinless, boneless chicken breast – 1 lb (about 2 large breasts)

Citrus

  • Fresh lime – zest and juice of 1 lime

Dairy & Alternatives

  • Coconut milk (full-fat or light) – 1 cup

Vegetables

  • Red bell pepper – 1 medium, chopped
  • Yellow bell pepper – 1 medium, chopped
  • Green beans – 1 cup, trimmed
  • Garlic – 2 cloves, minced
  • Fresh ginger – 1 tablespoon, minced

Oils & Seasonings

  • Olive oil – 1 tablespoon
  • Salt – to taste
  • Black pepper – to taste

Optional Garnish

  • Fresh cilantro – 2 tablespoons, chopped

Instructions

  1. Prepare Ingredients: Rinse and slice the chicken breasts into bite-sized pieces. Wash and chop the bell peppers and trim the green beans. Mince the garlic and ginger finely, zest and juice the lime, and have everything ready to go.
  2. Sauté Aromatics: Warm olive oil in a large skillet over medium heat. Add the garlic and ginger and cook for 1-2 minutes until fragrant and just starting to brown, forming the flavorful base.
  3. Cook the Chicken: Add the diced chicken to the skillet. Cook, stirring occasionally, until golden and no longer pink in the center, about 6-8 minutes depending on size.
  4. Add Vegetables: Toss in the chopped bell peppers and green beans, stirring together. Cook until vegetables are tender-crisp, approximately 4-5 minutes, to keep them vibrant and fresh.
  5. Pour Coconut Milk and Lime: Add the coconut milk along with the lime juice and zest. Stir gently and let the mixture simmer for 3-4 minutes to meld flavors and slightly thicken the sauce.
  6. Final Seasoning and Serve: Season with salt and pepper to taste. If desired, sprinkle fresh cilantro on top. Serve immediately, enjoying the creamy, citrusy, and savory flavors.

Notes

  • Use fresh lime juice and zest for the brightest flavor.
  • Do not overcook the vegetables to maintain crisp texture.
  • For a thicker sauce, simmer longer or add a cornstarch slurry (1 tsp cornstarch mixed with water).
  • Cut chicken and vegetables into evenly sized pieces for uniform cooking.
  • Let the dish rest a few minutes after cooking to enhance flavor development.
