Ingredients

Scale

Dry Ingredients

  • 1 cup unsweetened cocoa powder
  • 2 1/4 cups all-purpose flour (or gluten-free baking blend for gluten-free version)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup (2 sticks) unsalted butter, softened (or coconut oil for vegan version)
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 large egg (or flax egg for vegan version)
  • 1 teaspoon peppermint extract

Add-ins

  • 1 1/2 cups mini chocolate chips or chunks (dairy-free for vegan version)

Optional Garnishes and Variations

  • Crushed candy canes for sprinkling
  • Mint frosting for topping
  • Chopped walnuts or pecans

Instructions

  1. Prep Your Ingredients: Gather all ingredients and preheat oven to 350°F (175°C). Line baking sheet with parchment paper or silicone mat.
  2. Mix Your Dry Ingredients: In a medium bowl, whisk together cocoa powder, flour, baking soda, and salt to evenly disperse rising agents and flavor.
  3. Cream Butter and Sugars: In a large bowl, beat softened butter with granulated and brown sugars until light and fluffy to create an airy texture.
  4. Add Egg and Peppermint Extract: Beat in the egg and peppermint extract until fully combined and aromatic.
  5. Combine Wet and Dry Ingredients: Gradually fold dry mixture into wet ingredients, mixing just until no flour streaks remain to avoid toughness.
  6. Stir in Chocolate Chips: Fold in mini chocolate chips or chunks for melty pockets of chocolate throughout the cookies.
  7. Scoop and Bake: Drop spoonfuls of dough onto prepared baking sheet about 2 inches apart. Bake for 9 to 11 minutes until edges set but centers remain soft.
  8. Cool and Enjoy: Let cookies cool on the sheet for 5 minutes before transferring to a wire rack to set perfectly while staying soft.

Notes

  • Use room temperature butter for better creaming and lighter texture.
  • Do not overbake; remove cookies when edges are set and centers are still soft for chewy cookies.
  • Measure flour by spooning and leveling to avoid dense cookies.
  • Use fresh peppermint extract for bright, authentic mint flavor.
  • Chilling dough for at least 30 minutes produces thicker, more flavorful cookies.
  • To prevent chocolate chips sinking, toss them in a small amount of flour before folding into the batter.
  • Optional additions: crushed candy canes, mint frosting, or chopped nuts for extra flavor and texture.
