Ingredients

Scale

Cookie Dough

  • 1/2 cup (113g) unsalted butter, softened
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 cup (120g) all-purpose flour (or gluten-free blend for gluten-free option)
  • 1/4 teaspoon salt
  • 3/4 cup (130g) semi-sweet chocolate chips

Brownie Batter

  • 1/2 cup (113g) unsalted butter
  • 4 oz (113g) semi-sweet chocolate, chopped
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup (95g) all-purpose flour (or gluten-free blend for gluten-free option)
  • 1/4 cup (22g) cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare Cookie Dough: Mix 1/2 cup softened butter with 1/4 cup granulated sugar and 1/2 cup brown sugar until creamy. Add 1 teaspoon vanilla extract and gradually blend in 1 cup flour and 1/4 teaspoon salt just until combined. Fold in 3/4 cup chocolate chips. Refrigerate the dough until firm enough to shape.
  2. Make Brownie Batter: Melt 1/2 cup butter with 4 oz chopped semi-sweet chocolate until smooth. Whisk in 1 cup sugar, 2 eggs, and 1 teaspoon vanilla extract. Stir in 3/4 cup flour, 1/4 cup cocoa powder, 1/2 teaspoon baking powder, and 1/4 teaspoon salt until the batter is smooth and glossy.
  3. Form Cookie Dough Balls: Once chilled, scoop cookie dough into 1-tablespoon-sized balls. Place on a parchment-lined baking sheet and refrigerate again to keep firm.
  4. Assemble Brownie Bombs: Preheat oven to 350°F (175°C). Grease a muffin tin. Spoon a layer of brownie batter into each cup, gently press a cookie dough ball into the center, and cover fully with more brownie batter.
  5. Bake and Cool: Bake for 20-25 minutes, until edges are set but centers remain soft. Allow to cool briefly in the pan before transferring to a wire rack to cool completely.

Notes

  • Refrigerate cookie dough balls before baking to prevent spreading and melting into the brownie batter.
  • Use high-quality chocolate for best flavor and texture.
  • Do not overbake to keep gooey centers and fudgy edges.
  • Grease muffin pans well or use liners for easy removal.
  • Mix ingredients gently, just until combined, to avoid tough texture.
