Ingredients

Scale

Salmon and Glaze

  • 4 fresh skin-on salmon fillets (about 6 oz each)
  • 2 chipotle peppers in adobo, minced
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil (divided)
  • Salt, to taste
  • Black pepper, to taste

Rice and Vegetables

  • 2 cups cooked white or brown rice (preferably chilled or day-old)
  • 1 cup diced bell peppers (any color)
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro, plus extra for garnish
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Chipotle Honey Glaze: In a small bowl, combine the minced chipotle peppers in adobo, honey, fresh lime juice, and a splash of olive oil. Stir until the mixture achieves a thick, saucy consistency to coat the salmon with a perfect balance of smoky, sweet, and tangy flavors.
  2. Cook the Salmon: Heat a non-stick skillet over medium heat and add a tablespoon of olive oil. Place salmon fillets skin-side down and cook for 4-5 minutes. Flip the fillets, brush generously with the chipotle honey glaze, and cook for an additional 3-4 minutes until salmon is cooked through and slightly caramelized on the surface.
  3. Prepare the Rice and Vegetables: While the salmon cooks, fluff the cooked rice with a fork in a large bowl. Dice fresh bell peppers, cucumbers, and red onions, then add them to the rice. Toss with olive oil, fresh lime juice, chopped cilantro, salt, and pepper to create a fresh, well-seasoned base for the salad.
  4. Assemble the Salad: Once the salmon is cooked, let it rest for a minute before flaking it into large chunks. Gently fold the salmon pieces into the rice and vegetable mixture. Drizzle any remaining chipotle honey glaze over the top for extra flavor and garnish with more chopped cilantro.

Notes

  • Choose fresh or high-quality frozen salmon for the best texture and flavor.
  • Monitor cooking time carefully to avoid overcooking salmon; it should be moist and flaky.
  • Using day-old or chilled rice helps prevent the salad from becoming mushy.
  • Adjust the amount of chipotle and honey to suit your preferred level of sweetness and heat.
  • Add cilantro at the end to keep its flavor vibrant and aromatic.
