Instructions

  1. Prepare the Ingredients: Spiralize the zucchinis into noodles using a spiralizer or vegetable peeler. Dice the chicken breasts into bite-sized pieces, mince the garlic, and halve the cherry tomatoes. Have all ingredients ready before cooking to ensure a smooth process.
  2. Cook the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the diced chicken pieces, season lightly with salt and pepper, and cook for about 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside, keeping it warm.
  3. Sauté Garlic and Tomatoes: In the same skillet, add a little more olive oil if needed. Add the minced garlic and stir constantly for about 30 seconds until fragrant, taking care not to burn it. Then add the halved cherry tomatoes and cook for about 3 minutes until they soften and release their juices.
  4. Combine and Cook Zucchini Noodles: Return the cooked chicken to the skillet, and add the zucchini noodles. Gently toss everything together and cook for 2-3 minutes until the zucchini noodles are tender but still slightly crisp. Be careful to avoid overcooking to prevent sogginess.
  5. Finish with Flavors: Remove the skillet from heat. Sprinkle over freshly grated Parmesan cheese, torn fresh basil leaves, and squeeze fresh lemon juice on top. Toss lightly once more to combine all flavors. Serve immediately for the best taste and texture.
