Instructions

  1. Prepare the Chicken: Cook the chicken breast until tender, then shred finely with forks or chop into small pieces. This ensures the chicken mixes easily with the verde sauce for even flavor.
  2. Mix Chicken with Verde Sauce: In a bowl, combine the shredded chicken with the green salsa verde, stirring well to coat every piece with the zesty sauce.
  3. Assemble the Quesadillas: Lay a flour tortilla flat and sprinkle a generous layer of shredded cheese. Evenly spread a portion of the chicken verde mixture over the cheese, then top with a little more cheese before placing a second tortilla on top.
  4. Cook Until Golden and Melty: Heat olive oil or butter in a skillet over medium heat. Carefully place the assembled quesadilla in the pan and cook for 3-4 minutes per side until the tortillas are golden brown and the cheese is melted inside. Press gently with a spatula while cooking to bind the filling and tortillas.
