  • 1 cup green beans or peas (fresh or frozen)

Liquids & Broth

  • 6 cups chicken broth (preferably homemade or low sodium)

Herbs & Seasonings

  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Vegetables: Wash and chop all vegetables into bite-sized pieces. This ensures even cooking and comfortable bites in every spoonful.
  2. Sauté Aromatics: In a large pot, heat 1-2 tablespoons of olive oil over medium heat. Add the chopped onions, celery, and minced garlic. Cook until softened and fragrant, about 3-4 minutes.
  3. Brown the Chicken: Add the chicken pieces to the pot and cook until just browned on the outside to lock in flavor, about 5 minutes. Don’t worry about cooking through as it will finish cooking later.
  4. Build the Broth: Pour in the chicken broth and bring the mixture to a gentle boil. Add the chopped carrots, potatoes, and any other root vegetables. Reduce heat to low, cover, and let simmer until the chicken is cooked through and vegetables are tender, about 20-25 minutes.
  5. Add Green Vegetables and Seasoning: Stir in the green beans or peas along with the fresh parsley and thyme. Season the soup with salt and pepper to taste. Let cook together for another 5 minutes to meld flavors.
  6. Shred and Serve: Remove the chicken chunks from the pot, shred them with forks, then return the shredded chicken to the soup. Stir to combine. Serve hot, garnished as desired.
