  • 1/4 cup freshly grated Parmesan cheese

  • 1 garlic clove (optional, minced or in dressing)

Instructions

  1. Cook the Pasta: Boil the pasta in salted water following package instructions until al dente. Drain and rinse with cold water to stop cooking and cool the pasta for the salad.
  2. Prepare the Chicken: While the pasta cooks, season chicken breasts with salt, pepper, and a drizzle of olive oil. Grill or pan-sear over medium heat until fully cooked and golden brown on both sides. Allow to rest, then chop into bite-sized pieces.
  3. Chop the Romaine: Wash and dry the romaine lettuce, then chop it into bite-sized pieces ensuring it remains crisp and fresh.
  4. Toss Everything Together: In a large bowl, combine the cooled pasta, chopped chicken, and romaine lettuce. Gradually add Caesar dressing and toss gently to coat evenly without wilting the lettuce.
  5. Add Finishing Touches: Sprinkle freshly grated Parmesan cheese and croutons on top. Add freshly ground black pepper and a squeeze of lemon juice if desired. Toss lightly before serving.
