  • 2 chicken breasts

  • 2 tablespoons olive oil or butter
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning

Instructions

  1. Prepare the Spaghetti Squash: Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the halves cut-side down on a baking sheet and roast for about 40 minutes, or until tender and easily shredded with a fork into spaghetti-like strands.
  2. Cook the Chicken: While the squash roasts, season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil or butter in a large skillet over medium heat. Cook the chicken until golden brown and cooked through, about 5-6 minutes per side. Remove from the skillet and slice or shred after resting.
  3. Sauté the Garlic and Spinach: In the same skillet, add the minced garlic and cook until fragrant, about 30 seconds. Add the fresh spinach and sauté until wilted, stirring frequently to blend the flavors.
  4. Make the Alfredo Sauce: Reduce the heat to low and add the Greek yogurt or cream cheese to the skillet. Slowly pour in the chicken broth while stirring constantly to create a smooth sauce. Add the grated Parmesan cheese and continue stirring until the sauce thickens and becomes creamy.
  5. Combine All Ingredients: Add the spaghetti squash strands and cooked chicken back into the skillet. Gently toss everything together ensuring the squash is well coated with the Alfredo sauce and mixed with the spinach and chicken. Adjust seasoning with additional salt and pepper if needed. Remove from heat and serve warm.
