Instructions

  1. Prepare the Ingredients: Chop the onion and mince the garlic. Rinse the rice under cold water until it runs clear to remove excess starch and prevent clumping during baking.
  2. Sear the Chicken: Lightly season the chicken breasts or thighs with salt and pepper. Heat a skillet over medium heat and sear the chicken for 3-4 minutes per side until golden but not fully cooked. This locks in flavor and improves texture.
  3. Combine Ingredients: In a large mixing bowl, stir together the rinsed rice, chicken broth, sautéed onion, garlic, sour cream or cream cheese, salt, pepper, and paprika. Fold in any optional veggies and half of the shredded cheese for melty goodness throughout the casserole.
  4. Assemble and Bake: Grease a casserole dish and transfer the rice mixture into it. Nestle the seared chicken pieces evenly on top, then sprinkle the remaining cheese over the casserole.
