Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (80/20 for best flavor and juiciness)
  • 1 cup long-grain white rice, uncooked
  • 2 tablespoons taco seasoning (blend of chili powder, cumin, garlic powder, and paprika)
  • 1 cup shredded cheddar or Mexican cheese blend
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 2 cups beef broth or water
  • Salt and pepper, to taste
  • 1 tablespoon olive oil or cooking oil for sautéing

Instructions

  1. Brown the Ground Beef and Aromatics: Heat olive oil in a large skillet over medium heat. Add the ground beef, diced onions, and minced garlic. Cook, breaking apart the meat with a spatula, until the beef is browned and onions are translucent.
  2. Add Taco Seasoning and Rice: Sprinkle taco seasoning evenly over the cooked beef mixture and stir to coat thoroughly. Add uncooked long-grain white rice and stir for 1-2 minutes to lightly toast the rice and enhance its nutty flavor.
  3. Pour in Broth and Simmer: Pour beef broth or water over the mixture ensuring it covers the rice and beef. Bring to a boil, then reduce heat to low. Cover with a tight-fitting lid and simmer undisturbed for about 15 minutes, until rice is tender and liquid absorbed.
  4. Stir in the Cheese: Remove skillet from heat and immediately sprinkle shredded cheese on top. Cover again for a few minutes to allow cheese to melt into a creamy layer blending with the beef and rice.
  5. Fluff and Serve: Gently fluff the mixture with a fork to evenly distribute the cheese. Serve hot and enjoy.

Notes

  • Use fresh or freshly ground spices for best taco seasoning flavor.
  • Don’t skip toasting the rice—it develops richer flavor.
  • Adjust broth amount as needed based on rice brand instructions.
  • Keep the lid on while simmering to trap steam and ensure even cooking.
  • Choose a cheese blend for optimal melt and taste, like a mix of sharp cheddar and Monterey Jack.
