Ingredients

Scale

Main Ingredients

  • 1 to 1 ½ cups cooked chicken, shredded or finely chopped
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 large eggs
  • ½ cup all-purpose flour or breadcrumbs (can substitute with almond flour or gluten-free breadcrumbs for gluten-free option)
  • 2 tablespoons fresh parsley or chives, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • 2 tablespoons cooking oil (for frying)

Instructions

  1. Prepare the Chicken and Cheese Mixture: Shred the cooked chicken into fine pieces and place in a mixing bowl. Add your choice of shredded cheese, eggs, and freshly chopped herbs. Mix thoroughly to evenly distribute all the ingredients.
  2. Add the Binding Ingredients: Sprinkle flour or breadcrumbs along with garlic powder, onion powder, salt, and black pepper. Stir until the mixture thickens enough to hold together when shaped.
  3. Shape the Fritters: Using your hands or a spoon, form small patties or balls from the mixture, pressing gently so they stay intact without becoming too dense.
  4. Cook Until Golden and Crisp: Heat a skillet over medium heat with a little oil. Fry the fritters for about 3 to 4 minutes on each side until they develop a golden-brown crust and the cheese inside begins to melt.
  5. Drain and Serve Warm: Place cooked fritters on a paper towel-lined plate to absorb excess oil. Serve immediately while hot, garnished as desired.

Notes

  • Use freshly grated cheese as it melts better and binds the fritters well.
  • Do not overmix the ingredients; mix just enough to hold the fritters together for a light texture.
  • Cook on medium heat to avoid burning outside while heating through the chicken inside.
  • Use a non-stick skillet for easy flipping and minimal oil usage.
  • Let fritters rest briefly after cooking to allow cheese to settle and flavors to meld.
