  • 1/2 cup sour cream
  • 1 tablespoon olive oil

  • 68 corn or flour tortillas

Instructions

  1. Prepare the Chicken and Veggies: Slice the chicken into thin strips and season with fajita spices. Heat olive oil in a pan over medium-high heat and sauté the chicken until cooked through. In the same pan, add the sliced bell peppers and onions and cook until tender but still crisp, building the foundational flavor for the casserole.
  2. Assemble the Layers: Grease a casserole dish and lay down a single layer of tortillas to create a base. Spread half of the cooked chicken and vegetable mixture evenly on top. Add dollops of sour cream and sprinkle a generous amount of the cheese blend. Repeat the layers with remaining tortillas, chicken and veggies, sour cream, and finish with a final cheese topping.
  3. Bake Until Bubbly: Preheat the oven to 375°F (190°C). Cover the casserole with foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes until the cheese is golden and bubbly. Let the casserole cool for a few minutes before serving to allow the flavors to settle.
