Ingredients

Scale

Base

  • 1 pizza crust or flatbread (store-bought or homemade)
  • 2 tablespoons olive oil (for brushing)
  • 1/4 cup tomato sauce or salsa

Protein

  • 2 cooked breakfast sausage links or 4 slices of cooked bacon, chopped
  • 24 large eggs (depending on servings)

Vegetables

  • 1/4 cup chopped bell peppers (any color)
  • 1/4 cup chopped onions
  • 1/2 cup fresh spinach or kale, chopped

Cheese

  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese

Seasonings & Garnishes

  • Salt, to taste
  • Black pepper, freshly ground, to taste
  • Optional: fresh herbs like basil, parsley, or chives for garnish

Instructions

  1. Prepare Your Base: Preheat your oven to 425°F (220°C). Lightly brush your pizza crust or flatbread with olive oil to encourage a golden, crispy edge. Spread a thin, even layer of tomato sauce or salsa over the crust, leaving the edges clear for easy handling.
  2. Add the Toppings: Evenly scatter the cooked sausage or bacon over the sauce. Add chopped bell peppers, onions, and fresh greens on top. Sprinkle the mozzarella and cheddar cheese blend evenly over the toppings, covering them just enough to melt into a bubbly, golden layer during baking.
  3. Crack and Cook the Eggs: Use a spoon to make small wells in the toppings and carefully crack an egg into each well, one per serving area. For a softer yolk, bake immediately; for fully cooked eggs, scramble separately and spread over the pizza before adding cheese.
  4. Bake to Perfection: Place the pizza on a baking sheet or preheated pizza stone and bake in the oven for 10-12 minutes, or until the crust is golden brown, cheese is melted, and eggs are cooked to your preferred doneness.
  5. Finish and Serve: Remove from the oven and let the pizza cool for a minute or two. Season with freshly ground pepper, herbs, or a drizzle of hot sauce if desired. Slice and serve warm.

Notes

  • Prep Ahead: Cook sausage and chop vegetables the night before to save time in the morning.
  • Cheese Blend: Use a mixture of mild mozzarella and sharp cheddar for the best melt and flavor.
  • Egg Handling: Crack eggs onto the pizza just before baking to keep their shape and freshness.
  • Even Heat: Use a preheated pizza stone to achieve a crispier and evenly cooked crust.
  • Avoid Overloading: Don’t pile on too many toppings to maintain a crisp crust and prevent sogginess.
