Streusel Topping

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup unsalted butter, cold and cut into cubes

Instructions

  1. Prepare the Streusel Topping: Mix brown sugar, flour, cinnamon, and cold butter cubes until the mixture becomes crumbly. This will create a crunchy, sweet, and spicy topping.
  2. Mix the Batter: In a large bowl, cream together butter and sugar until smooth and fluffy. Add eggs and vanilla extract, beating until fully combined. Alternately add the dry ingredients with milk, mixing gently until you form a thick, uniform batter.
  3. Fold in Blueberries: Carefully fold fresh blueberries into the batter, avoiding overmixing to prevent the berries from breaking and discoloring the batter.
  4. Layer and Top: Pour half of the batter into a greased baking pan. Sprinkle half of the streusel topping evenly over the batter. Add the remaining batter on top and finish by sprinkling the rest of the streusel.
  5. Bake to Perfection: Bake the cake in a preheated oven at 350°F (175°C) for 40-45 minutes, or until a toothpick inserted into the center comes out clean and the streusel turns golden brown.
