Instructions

  1. Prepare Your Ingredients: Chop all vegetables finely and cube your protein choice. Beat the eggs and arrange all ingredients near your Blackstone for an efficient cooking process.
  2. Preheat the Blackstone Griddle: Set the griddle to medium-high heat and add 1 tablespoon of cooking oil. Heat until hot enough to sizzle but not smoking heavily.
  3. Cook the Protein: Add your chosen protein to the griddle and cook until browned and fully cooked through. Remove and set aside.
  4. Sauté Aromatics and Vegetables: Add minced garlic and ginger to the griddle with a little more oil, then add the diced onions, carrots, peas, and half the scallions. Stir frequently to prevent burning and to keep the vegetables crisp.
  5. Scramble the Eggs: Push the vegetables to one side of the griddle, pour beaten eggs into the cleared space, and scramble gently until soft and fluffy.
