Instructions

  1. Prepare the Crust: Combine graham cracker crumbs and melted butter in a bowl until the mixture is crumbly and well mixed. Press firmly into the bottom of a lined baking dish or mold to form an even crust layer. Chill in the refrigerator for at least 15 minutes to set.
  2. Make the Cheesecake Filling: Beat the softened cream cheese with powdered sugar and vanilla extract until smooth, silky, and slightly thickened to hold shape.
  3. Incorporate the Blackberries: Gently fold fresh blackberries into the cheesecake mixture, taking care to keep the berries mostly intact to preserve their texture and vibrant appearance.
  4. Assemble the Pops: Evenly spread the cheesecake and blackberry mixture over the chilled crust. Refrigerate again until firm, about 1-2 hours. Once set, cut into bite-sized squares and carefully insert lollipop sticks into each piece to create the pops.
