Cheesecake Filling
- 16 oz full-fat cream cheese, softened
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh blackberries
Crust
- 1 1/2 cups graham cracker crumbs
- 6 tablespoons melted butter
Optional Coating and Accessories
- 6 oz white chocolate, melted (optional for dipping or drizzling)
- Lollipop sticks
- Prepare the Crust: Combine graham cracker crumbs and melted butter in a bowl until the mixture is crumbly and well mixed. Press firmly into the bottom of a lined baking dish or mold to form an even crust layer. Chill in the refrigerator for at least 15 minutes to set.
- Make the Cheesecake Filling: Beat the softened cream cheese with powdered sugar and vanilla extract until smooth, silky, and slightly thickened to hold shape.
- Incorporate the Blackberries: Gently fold fresh blackberries into the cheesecake mixture, taking care to keep the berries mostly intact to preserve their texture and vibrant appearance.
- Assemble the Pops: Evenly spread the cheesecake and blackberry mixture over the chilled crust. Refrigerate again until firm, about 1-2 hours. Once set, cut into bite-sized squares and carefully insert lollipop sticks into each piece to create the pops.
- Optional Coating: If desired, dip each cheesecake pop into melted white chocolate until coated. Place on parchment paper to set completely. Optionally, decorate with blackberry bits or crushed nuts before the coating hardens.
Notes
- Use room temperature cream cheese for a lump-free smooth filling.
- Chilling the crust and filling is essential for pops to hold shape when cut.
- Fold the blackberries gently to avoid crushing and discoloration.
- Choose ripe fresh blackberries for optimal flavor and juiciness.
- Use a fork or skewer to dip the pops in chocolate carefully to prevent breaking.
