  • 1 tbsp sesame oil, divided (1 tsp for noodles, 1 tsp for finishing)

Instructions

  1. Prepare Ingredients: Slice the beef thinly against the grain for tenderness. Chop all vegetables into bite-sized, even pieces. Cook noodles according to package instructions, drain, then toss with 1 teaspoon sesame oil to prevent sticking and set aside.
  2. Make the Sauce: In a small bowl, whisk together soy sauce, oyster sauce, sugar, cornstarch, and water until smooth and well combined. Set aside.
  3. Sear the Beef: Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Quickly stir-fry the beef slices for about 2 minutes until browned but not fully cooked. Remove the beef and set aside.
  4. Stir-Fry the Vegetables: Add remaining tablespoon of vegetable oil if needed. Sauté garlic and ginger until fragrant, about 30 seconds. Add bell peppers, carrots, and peas, stir-frying for 3-4 minutes until vegetables are tender but still crisp and colorful.
  5. Combine and Simmer: Return the beef to the pan along with the cooked noodles. Pour the prepared sauce over everything and toss constantly until the sauce thickens and evenly coats noodles, beef, and vegetables.
  6. Finish and Garnish: Turn off heat, stir in sliced green onions and drizzle remaining 1 teaspoon sesame oil over the dish. Serve immediately while hot.
