Ingredients

Scale

Main Ingredients

  • 1 lb 80/20 ground beef
  • 68 slices of bacon, cooked crispy and chopped
  • 1 cup sharp cheddar cheese, grated or sliced
  • 1 package puff pastry or biscuit dough (about 8 oz)
  • 1/4 cup finely chopped onion
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Optional Condiments and Add-ins

  • Ketchup, mustard, or pickles (for stuffing or serving)
  • Finely diced bell peppers, mushrooms, or jalapeños (optional for beef mixture)
  • Alternative cheeses such as mozzarella or pepper jack (optional cheese swaps)
  • Gluten-free dough or low-carb wraps (for gluten-free option)
  • Hot sauce or red pepper flakes (for spicy version)

Instructions

  1. Cook and Season the Beef: Heat a skillet over medium-high heat and cook the ground beef with the finely chopped onion, garlic powder, salt, and pepper. Cook until the beef is browned and fully cooked, then drain any excess fat.
  2. Prepare the Bacon and Cheese: Cook the bacon until crispy, then chop it into small pieces. Grate or slice the cheddar cheese so it’s ready to be stuffed into the dough.
  3. Assemble the Bombs: Roll out your puff pastry or biscuit dough into small squares. Place a spoonful of the beef mixture in the center of each square, then add bacon bits and cheese on top. Fold the dough over and seal the edges tightly to form a ball. Use water or egg wash to help seal if needed.
  4. Bake to Perfection: Place the assembled bombs on a baking sheet lined with parchment paper. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until golden brown and the cheese inside has melted.
  5. Cool and Serve: Allow the bombs to cool for a few minutes to prevent burning your mouth. Serve warm with your favorite dipping sauces like ketchup, mustard, ranch, or barbecue sauce.

Notes

  • Don’t overfill the dough to avoid bursting during baking.
  • Seal edges well with water or egg wash for neat, sealed bombs.
  • Use room temperature dough for easier rolling and folding.
  • Drain excess fat from the cooked beef for less greasy bombs.
  • Test bake one bomb first if using a new dough brand to adjust cooking time.
