Ingredients

Scale

Steak and Sauce

  • 1 lb flank or skirt steak
  • Salt and pepper, to taste
  • 1/2 cup BBQ sauce (smoky or sweet, your favorite)

Rice

  • 2 cups white or brown rice (cooked according to package instructions, optionally in broth)

Spicy Cream Sauce

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 12 tablespoons hot sauce (adjust to taste)
  • 1 tablespoon lime juice
  • 1/4 teaspoon garlic powder

Fresh Vegetables & Garnishes

  • 1 sliced bell pepper (any color)
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving
  • Optional: chopped green onions, toasted pepitas or chopped peanuts, crispy fried onions

Instructions

  1. Prepare the Steak: Season the steak with salt and pepper. Brush both sides generously with BBQ sauce. Grill over medium-high heat for 4-5 minutes per side or until desired doneness. Rest steak for several minutes, then slice thinly against the grain.
  2. Cook the Rice: While steak rests, cook rice according to package instructions, preferably in broth for added flavor. Fluffy rice helps soak up sauces and juices.
  3. Make the Spicy Cream Sauce: In a small bowl, whisk together mayonnaise, sour cream, hot sauce, lime juice, and garlic powder until smooth and creamy. Adjust hot sauce to your preferred spice level.
  4. Assemble the Bowls: Place a base of cooked rice in each serving bowl. Layer sliced BBQ steak on top, then scatter sliced bell peppers, red onion, and chopped cilantro over the steak. Drizzle generously with the spicy cream sauce.

Notes

  • Use a meat thermometer to ensure perfectly cooked steak.
  • Rest steak after cooking to keep it juicy.
  • Adjust the spicy cream sauce heat by varying hot sauce amounts.
  • Prepare rice and spicy cream sauce ahead of time to save dinner prep time.
  • Fresh cilantro and lime brighten the flavors—don’t skip them.
  • For variations, swap proteins, use different grains, or add extra veggies like grilled corn or avocado.
