Ingredients

Scale

Meat and Cheese

  • 1 lb ground beef (80/20 mix)
  • 6 bacon strips
  • 1 cup shredded cheddar cheese

Binders and Fillers

  • 3/4 cup breadcrumbs (or gluten-free alternative like crushed gluten-free crackers or oats)
  • 2 large eggs, beaten
  • 1/2 cup milk

Vegetables and Aromatics

  • 1 medium onion, diced
  • 2 cloves garlic, minced

Condiments and Seasonings

  • 1/4 cup ketchup
  • 1 tablespoon mustard
  • 1 tablespoon Worcestershire sauce
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Bacon: Cook the bacon strips in a skillet over medium heat until they are crispy but not overly done. Remove them and set aside on paper towels to drain excess fat. Reserve a small amount of the rendered bacon fat for later use.
  2. Mix the Meatloaf Ingredients: In a large bowl, combine the ground beef, breadcrumbs, beaten eggs, diced onion, minced garlic, shredded cheddar cheese, milk, ketchup, mustard, Worcestershire sauce, salt, pepper, and a splash of the reserved bacon fat. Mix gently to combine all ingredients without overworking the meat mixture.
  3. Shape the Meatloaf: Transfer the meat mixture into a loaf pan or baking dish and shape it into a neat loaf. Lay the cooked bacon strips evenly on top, pressing the ends slightly into the sides so they adhere during baking.
  4. Bake: Preheat your oven to 350°F (175°C). Bake the meatloaf for about 60 minutes, or until the internal temperature reaches 160°F (71°C). Once done, allow the meatloaf to rest for a few minutes to retain its juices before slicing.
  5. Serve and Enjoy: Slice the meatloaf and serve it hot. Complement with extra ketchup or other favorite burger toppings, or use slices for sandwiches.

Notes

  • Don’t overmix the meat mixture to avoid a dense meatloaf texture.
  • Use fresh breadcrumbs for better moisture absorption and tenderness.
  • Allow the meatloaf to rest before slicing to lock in moisture and achieve clean slices.
  • Cook bacon until crispy but still flexible to ensure it stays on top of the meatloaf during baking.
  • Check the internal temperature with a meat thermometer for safe and perfect cooking.
