Ingredients

Scale

Main Ingredients

  • 24 ladyfingers (savoiardi)
  • 1 1/4 cups strong brewed espresso, cooled
  • 16 oz mascarpone cheese, softened
  • 4 large egg yolks
  • 3/4 cup granulated sugar
  • Cocoa powder, for dusting
  • 2 tbsp Marsala wine (optional)

Instructions

  1. Prepare the Espresso: Brew a strong pot of espresso and let it cool to room temperature. This espresso will be used to soak the ladyfingers to infuse the dessert with its signature coffee flavor.
  2. Whisk Egg Yolks and Sugar: Using a mixer, beat the egg yolks and granulated sugar together until the mixture becomes pale and creamy, helping to create a rich and silky mascarpone cream base.
  3. Combine Mascarpone with Egg Mixture: Gently fold the softened mascarpone cheese into the egg yolk and sugar mixture, ensuring the cream remains smooth and airy without lumps.
  4. Soak Ladyfingers in Espresso: Quickly dip each ladyfinger into the cooled espresso (optionally mixed with Marsala wine), taking care not to over-soak, then layer them neatly in a serving dish.
  5. Layer Cream and Ladyfingers: Spread half of the mascarpone cream over the first layer of soaked ladyfingers. Repeat by adding another layer of dipped ladyfingers and the remaining mascarpone cream on top.
  6. Chill and Dust with Cocoa Powder: Refrigerate the assembled tiramisu for at least 4 hours or overnight to allow flavors to meld and the cream to set. Just before serving, dust the top generously with cocoa powder for a classic finish.

Notes

  • Use Fresh Ingredients: Fresh eggs and high-quality mascarpone significantly enhance taste and texture.
  • Don’t Over-Soak Ladyfingers: A quick dip of 1-2 seconds keeps them moist without becoming soggy.
  • Chill Thoroughly: Setting the tiramisu overnight improves flavor blending and cream firmness.
  • Strain Espresso: If your espresso is too strong or gritty, strain to avoid bitterness or texture issues.
  • Handle Gently: Fold ingredients carefully to maintain airiness in the mascarpone cream.
