Ingredients

Scale

Protein

  • 1 pound ground beef or sausage

Vegetables

  • 1 cup diced onion
  • 1 cup diced green peppers
  • 3 cups frozen hash browns (thawed and patted dry for best results)

Dairy & Sauce

  • 1 can (10.5 oz) cream of mushroom soup (use gluten-free as needed)
  • 2 cups shredded cheddar cheese, divided

Seasonings

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Brown the Meat: Heat a skillet over medium heat and cook the ground beef or sausage until fully browned. Drain excess fat to prevent the casserole from becoming greasy.
  2. Sauté Vegetables: Add diced onion and green peppers to the same skillet and sauté until softened and fragrant, about 5 minutes, to bring out their natural sweetness.
  3. Mix the Base: In a large bowl, combine the cooked meat and vegetables with frozen hash browns, cream of mushroom soup, and half of the shredded cheddar cheese. Stir until everything is evenly mixed.
  4. Assemble the Casserole: Transfer the mixture into a greased 9×13-inch baking dish and spread it out evenly. Sprinkle the remaining cheddar cheese on top to create a delicious, golden crust.
  5. Bake to Perfection: Bake at 350°F (175°C) for 45-50 minutes or until the casserole is bubbling and the top is golden brown. Let it cool slightly before serving to allow flavors to meld.

Notes

  • Use fresh hash browns: thaw and pat them dry before mixing for extra crispiness.
  • Don’t skip draining the meat: removing excess grease keeps the casserole from being soggy.
  • Rest before serving: let the casserole sit for 10 minutes to set up for cleaner slices.
  • Double the cheese for extra flavor: add more sharp cheddar inside and on top if desired.
  • Customize seasoning: adjust salt, pepper, and herbs according to your taste.
